I’m about to make my “current” favorite recipe. I say current because, as my husband and daughter know all too well, I tend to drive my favorites into the ground, making them day after day until I have to find my next favorite. But the recipes I make are simple, fast and pretty darn good so they're worth repeating.
My daughter and I call this our “Anything Salad” because we throw anything we find in our ‘frig and pantry into it. Here’s our latest: Throw in any lettuce or greens (this week it’s spinach), add garbanzo beans, kidney beans, corn, mandarin oranges (cuties), apples, tomatoes, and croutons. Or anything else you find. Mix in a vinaigrette dressing or try a fig and walnut dressing -- that was a big hit last week. There are so many fun salad dressings on the shelves to try. Then mix it all up and there you go! We thought about calling this our "Everything Salad" and it's that, too.
